Blueberry Muffin
Ingredients:
- 240g all purpose flour
- 200g caster sugar
- 1/2tsp salt
- 2tsp baking powder
- 1/2 lemon zest
- 65g vegetable oil
- 120g milk
- 2 eggs
- 1tsp lemon juice
- 1tsp vanilla extract
- 380g blueberries

Steps:
- Preheat the oven to 190°C.
- Sieve 240g of all purpose flour, 200g of caster sugar, 1/2tsp of salt and 2tsp of baking powder into a mixing bowl, mix well.
- Add lemon zest from half of a lemon, mix well.
- Coat 380g of blueberries in flour.
- In a separate bowl whisk 65g of vegetable oil, 120g of milk, 2 beaten eggs 1tsp lemon juice and 1tsp of vanilla extract together.
- Add the liquid mixture into the dry mixture, mix well.
- Fold the blueberries coated in flour into the batter.
- Bake at 190°C for 25mins.
