Lemon Pound Cake
Ingredients:
Lemon Pound Cake
- 200g granulated sugar
- 2tsp lemon zest
- 120g softened butter
- 2tbsp vegetable oil
- 2 eggs
- 2tbsp lemon juice
- 180g all purpose flour
- 1tsp baking powder
- 1tsp salt
- 120mL milk
Lemon Glaze
- 50g sugar
- 2tbsp lemon juice

Steps:
Lemon Pound Cake
- Preheat the oven to 150°C.
- Mix 200g of granulated sugar with 2tsp of lemon zest.
- Add 120g of softened butter to the mixture, whisk until light and fluffy.
- Add 2tbsp of vegetable oil, mix well.
- Add 2 eggs into the mixture one at a time, mix well.
- Add 2tbsp of lemon juice into the mixture, mix well.
- Sieve 180g of all purpose flour, 1tsp of baking powder and 1tsp of salt into the mixture, mix well.
- Add 120mL of milk into the batter, mix well.
- Transfer the batter into the pound cake pan, bake at 150°C for 45mins.
Lemon Glaze
- Add 2tbsp of lemon juice to 50g of sugar, mix well.
- Drizzle lemon glaze onto the lemon pound cake.
Tips
- 1 lemon produces about 2tsp of lemon zest and 4tbsp of lemon juice. So 1 lemon is needed for this recipe.
- An electric mixer can be used to whisk the butter and sugar mixture.
