Lunar New Year Rice Cake
Ingredients:
- 300g brown slab sugar
- 320mL water
- 230g glutinous rice flour
- 180g wheat starch
- 60g caster sugar
- 180g coconut milk
- 15g vegetable oil

- 12x24cm pound cake pan
- Spatula/spoon
- Small pan
- Mixing bowls

Steps:
- Brush the pound cake pan with oil.
- Boil 300g of brown slab sugar with 320mL of water until fully dissolved.
- Mix 230g of glutinous rice flour, 180g of wheat starch and 60g of caster sugar in a separate mixing bowl.
- Add 180g of coconut milk into one third of the brown slab sugar solution.
- Add the coconut milk and sugar solution into the powder mixture, mix well. Adjust the consistency by adding more sugar solution or water.
- Boil remaining sugar solution and mix into the mixture once boiled. The consistency should resemble the photo shown.
- Pour the mixture into the pound cake pan, steam for 1.5hr.
- Cut into slices and fry with egg to serve.
