- 90g caster sugar
- 120g ground almond
- 180g all-purpose flour
- 1tsp baking powder
- 1tsp bicarbonate of soda
- 1/4tsp salt
- 140mL vegetable oil
Egg Wash
- 1 egg yolk
- 1tsp milk
- A pinch of salt

Steps:
- Mix 90g of caster sugar, 120g ground almond, 180g all-purpose flour, 1tsp of baking powder, 1tsp of bicarbonate of soda and 1/4tsp of salt.
- Add 140mL of vegetable oil, mix well.
- Roll the dough into balls and place them onto a baking tray, with each being 8g approximately.
- Prepare the egg wash by mixing 1 egg yolk, 1tsp of milk and a pinch of salt.
- Brush the top of the cookies with egg wash.
- Bake at 160°C for 18mins.
Tips
- When mixing vegetable oil with the dry mixture, mixing by hand might be easier.
- Place the cookies slightly apart on the baking tray, but they do not have to be as far apart compared to baking other types of cookies such as chocolate chip cookies, given that almond cookies do not spread much when baking.
