Blueberry Muffin

Ingredients:

  • 240g all purpose flour
  • 200g caster sugar
  • 1/2tsp salt
  • 2tsp baking powder
  • 1/2 lemon zest
  • 65g vegetable oil
  • 120g milk
  • 2 eggs
  • 1tsp lemon juice
  • 1tsp vanilla extract
  • 380g blueberries

Steps:

  1. Preheat the oven to 190°C.
  2. Sieve 240g of all purpose flour, 200g of caster sugar, 1/2tsp of salt and 2tsp of baking powder into a mixing bowl, mix well.
  3. Add lemon zest from half of a lemon, mix well.
  4. Coat 380g of blueberries in flour.
  5. In a separate bowl whisk 65g of vegetable oil, 120g of milk, 2 beaten eggs 1tsp lemon juice and 1tsp of vanilla extract together.
  6. Add the liquid mixture into the dry mixture, mix well.
  7. Fold the blueberries coated in flour into the batter.
  8. Bake at 190°C for 25mins.
