Butter Cookies
Ingredients (for 50 cookies):
- 150g softened unsalted butter
- 40g caster sugar
- 1/2 tsp vanilla extract
- 160g self raising flour
Equipment:

- Mixing bowl

Steps:
- Preheat the oven to 190°C.
- Whisk 150g of softened unsalted butter with 40g of sugar with an electric mixer until pale in colour.
- Add 1/2tsp of vanilla extract, mix well.
- Sieve 160g of self raising flour into the mixture, mix with a spatula.
- Transfer the batter into a piping bag, pipe the cookies in whichever style you wish.
- Refrigerate the tray of cookies for 20mins.
- Bake at 190°C for 10-12mins.
Tips
- The butter should be softened just enough: it should be soft when you press the surface of the butter, but no trace of butter should be left on your finger when you lift it up. This ensures that the shape of the cookies would hold after baking.
- The butter would take the right amount of time to melt when heated in the oven. This means that the cookies would not be flattened too much so the shape would hold
- To quickly soften butter, fill a glass with boiling water to heat the glass. Then remove the water and invert the glass to cover the butter, wait for roughly 8 minutes for the butter to soften.
- Decorating the butter cookies with gold sprinkles on top could give a classy look to the cookies – perfect for a gift!
